Veal Shank with Sweet Spices and Glazed Carrots
Slowly braised with ginger, cardamom, and coriander, coated with a light creamy sauce and served with melting glazed carrots.

Veal Meatballs with Fried Sage Leaves
Veal polpette is a classic Roman dish. Instead of bathing the meatballs in heavy tomato sauce, I douse them with a white-wine pan sauce.

Veal Marengo with Pearl Onions, Button Mushrooms and Croutons
Veal in a white wine tomato sauce with mushrooms, pearl onions and herbs served over rice.

Veal Scaloppini with Marsala Sauce
Thin cutlets of veal dredged in a seasoned flour are sautéed to a light golden brown. The sweetness of the Marsala wine blends beautifully with the veal and polenta.
